Barbecue chicken liver

Ingredients:

  • fresh chicken livers
  • skewers (for cooking on barbecue)

Marinade mixture:

  • zest of lime
  • juice of one lime
  • 1 tablespoon palm vinegar
  • 1 tablespoon soy sauce
  • 1 tablespoon palm oil
  • 1 clove crushed garlic
  • ¼ teaspoon salt
  • ¼ teaspoon sugar
  • ground coriander seeds
  • ground fennel seeds
  • ground black pepper
  • a few drops of Tabasco® sauce

Method:

Prepare the marinade

Wash the chicken livers and drain

Add the chicken livers to the marinate and mix gently with your hands

Tip: chicken livers are fragile and need care when handling

Place in the fridge for a least an hour or preferable overnight

Light and ready the barbecue!

Gently skew four chicken livers on a skewer and barbecue

When cooking brush with a palm oil and soy sauce mixture

Take care when turning the skewers to keep the chicken livers whole

Serve with barbecue sauce or salad
