Chicken curry (serves two)

Chicken curry

Ingredients:

  • 4 chicken drumsticks washed or chicken fillets cut to bite sized portions as preferred
  • sliced washed potato (1 medium size)
  • chopped onion (1 small size)
  • 1 tablespoon olive oil
  • 2 level tablespoons curry paste
  • 1 chicken stock cube
  • ½ pint hot water
  • 2 bay leaves (fresh or dried)
  • pepper corns
  • 2 tablespoons coconut milk
  • cornflour to thicken

Method:

Place the olive oil into a saucepan and heat

Fry the chopped onion, add the sliced potato and stir for two minutes

Add the chicken and stir until it changes colour to a golden brown on the surface

Add the curry paste, bay leaves and pepper corns

Dissolve the chicken stock cube into ½ pint of hot water

Add the water and stock to the pan and bring to the boil

Simmer for approximately 25 minutes until the chicken is cooked

Add the coconut milk and leave for 2 minutes on the heat

Add cornflour if required to thicken

Serve while hot with fragrant rice
